MEXICAN ESQUITES

Esquites are a snack prepared on the street based on corn kernels. What gives it the flavor is that it is prepared as a meatless consommé and is served with butter, cheese, cream, lemon and chili powder. Its name means toasted corn and you can enjoy it to your liking
Ingredients
- 6 cups white corn kernels
- 1/2 finely chopped white onion or 2 tablespoon onion powder
- 3 large cloves of garlic finely minced or 2 tablespoons garlic powder
- 3 tablespoons of butter
- Salt to taste
- Epazote optional or you can substitute bay leaves.
- 5 cups water
To accompany
- Cotija cheese or fresh grated to taste
- Mexican cream to taste
- Mayonnaise to taste
- Lemon juice to taste
- Chili powder or hot sauce to taste
Instructions
Start by adding the butter, chopped onion, and garlic to a saucepan and sauté until translucent. Add the corn kernels and cook for 5 minutes at medium heat. Add the water, the epazote and the salt. boil for 20 minutes.
Once ready, serve in disposable cups and add the ingredients to accompany them on top and stir well. Ready enjoy them you will love them!
